8 Delicious & healthy icy pole recipes!

I LOVE summer days, watching the kids playing outside in the pool and hearing their laughter, brings back such great memories as child!


And there is the simple joy of eating ice-cream as a child. For so long I put off making my own ice-cream as it was simply easier to buy it. But then I found these amazing icy pole moulds and since then we haven’t stopped making them! The best thing about making your own is that the kids are in fact eating smoothies and drinks filled with healthy ingredients. So  I honestly don’t mind if they have a few a day.

1. Green juice icy poles


My kids aren’t that keen on having green juices everyday but they will have a green icy pole! I’ve put this one first cause it seriously is so good for your kids.

Ingredients:1 cup water
2 1/2 cups kale
2 green apples, cored
1 cup diced pineapple
1/2 cup parsley leaves
1 medium cucumber, quartered
2 celery stalks, roughly chopped
2 Tablespoons lemon juice
2 Tablespoons agave nectar or honey (optional)

2. Watermelon whole fruit icy pole

3 cups watermelon puree (about 1/4 to 1/2 a watermelon)
1/2 cup fresh blueberries
1/2 cup chopped fresh strawberries
1 kiwi, peeled and sliced
1 peach or nectarine, diced small
handful fresh cherries, pitted and chopped

3. Strawberry, Mango, Chai Icy poles


Beat the summer heat with these Strawberry Mango Chia Popsicles! Fresh fruit, chia seeds, and coconut water is all you need to whip up these hydrating pops.
Yield: 10 (3oz) popsicles

1½ cups strawberries (fresh or frozen)
1½ cup mango pieces (fresh or frozen)
1¼ cup coconut water
4 tsp chia seeds
1 tsp honey

4. Coconut fig icy pole – dairy & sugar-free 



1 cup coconut milk.
3 tablespoons maple syrup.
½ tablespoon pure vanilla extract.
5 ripe figs.

5. NO churn, vegan, chocolate ice-cream


Only 5 ingredients!
64 mls coconut cream chilled overnight in the fridge.
2/3 cup unsweetened raw cocoa powder.
396 gms pitted dates (if not sticky and moist, soak in warm water for 10 minutes then drain)
1 tsp pure vanilla extract
1/2 cup unsweetened almond milk with the full fat coconut cream.  the vigorous whipping, and the mysterious date

The vigorous whipping, and the date and cocoa powder makes a fluffy chocolate mousse-like base that freezes up beautifully.

6. Mango Lassi ice-cream


2 cups mango pulp
1 cup plain whole milk yogurt
1/2 cup half and half (12.5%) milk
1/4 cup + 2 tbsp white sugar or a

Place all ingredients in a blender or large bowl and blend/whisk until smooth, then simply freeze!

7. Avocado Ice-cream


A delicious vegan, raw and gluten-free Avocado Ice Cream!

1½ avocados.
1 teaspoon lemon juice.
1 can (14 oz / 400ml) full-fat coconut milk.
⅓ cup / 100g Organic Rice Syrup.

8. Blueberry Chocolate Chunk Vegan Ice Cream

3 cups coconut milk.
1 cup blueberries.
¾ cup evaporated cane juice.
2 Tablespoons good quality cocoa powder.
2 teaspoons vanilla extract.
½ cup bittersweet chocolate chunks or shavings.
